Organic Black Barley is also known as Purple Hull-less Barley. Originally from Ethiopia, this variety has not been raised until recently because of the low yield. A farmer in Montana decided to take a risk. This is actually the only grain that can go from field to table without being processed, because the gloom or bran layer stays attached to the kernel, and is edible. Suggested Use: The shape of this hearty grain resembles a coffee bean and cooks up to a glossy purplish-mahogany color. It is wonderful in soups and stuffing's or alone as a beautiful alternative to rice (because of a somewhat chewy texture, it is best mixed with other grains when used alone.) Hands down my favorite grain from Purcell Farms. Breakfast, lunch, dinner, soups, salads, hot, cold, main dish, or side dish. It works for them all. It has a deep malty nutty flavor that I love. My favorite it to mix with wild rice for breakfast or with beef or chicken for a quick meal. Easy to make a large batch and use it for several meals. Retains texture when reheated.
