This is a plump white bean with a creamy texture, it was popular in the U.S. in the 1850's as a baking bean. They have the flavor of bacon. Puree nicely--good for soup. Basic Bean Cooking Instructions Pick over beans and rinse thoroughly in cold water. Place cleaned beans in a bowl of fresh cold water, cover and soak for 3 to 8 hours or overnight at room temperature; drain and rinse well. Or place beans in a saucepan with water of cover, bring to a boil, remove from the heat , and soak for 1 1/2 hours, drain and rinse well. Cook beans by covering with 2" of water, simmering 1 to 2 hours or until tender depending on size of the bean.

Love these beans

Marrow beans are a fantastic heirloom. Cooks up plump and tasty. My mom used to buy them all the time at the grocery store when I was a child. She used them in baked beans and soup. So glad to see they are still available.

A delicious bean

I used to be able to find marrow beans in my local supermarket, but that ended years ago. Purcell Farms is my go-to place for them now. They are similar to navy beans, but better. They cook up plump and taste delicious
